    Food/sights tour with Vincenzo- his accented English requires concentration.   Us and a young Ukrainian couple (relocated in Ireland). Modus operandi- walk/talk/mangia
     1st taste- Arab version of a potato croquette with chickpea chips - fried- delicious. 
      2nd-Pasta Busiata alla Trapanese- long spirals with tomatoes,almonds,basil,oil,and pecorino- but with a striped garlic (native to here)
      3rd-Couscous in Fish Broth with calamari on top.  Restaurant reviewed by Gamba Rosso- received one shrimp (star)
     Last- but best- a freshly made cannoli- heavenly
     History/legends of the hooked shaped peninsula.  A sailor’s (and pirates)town- he shows us a famous bordello location - notice the design on its ironworks.  Via Garibaldi is impressive,  huge marble structures and churches flank one side- leading to Palazzo Cavarretta.  The other side has restaurants and stores. 
     After 4 we drive -  salt pans to catch the sunset.  Il Museo del Sale. Family run business still- 6 generations. Windmills to Electric machinery. The workers were paid in salt , sale became SALARY.   The guide sings  a chant from the salt workers who would sing as they carried the heavy containers .  The overseer used twelves to determine pay- he’d use his thumb and the indents on his fingers to keep count of the bushels carried.
    Dinner at Salameruci- delicious assorted appetizers - with arrancini and slices of tuna.  Then swordfish stuffed with caponata on the side.  Afterwards a long walk in the central core .
Liscio come l’olio. Smooth oil- = without complications.  - like this day!
