Another chocolate mousse!

Tomorrow, on Saturday evening, Drew and Lisa invited a bunch of friends. 14 people expected! “Isabelle, could you make a chocolate mousse?” Sure, easy done and always yummy, and I feel confident, since I just made one.

It is about 20 hr this evening, and I have to make the chocomousse now because on Saturday the kitchen will be Drew’s and Lisa’s and I then best stay out of the way. I feel a little tired, but think, I did it two days ago, so I just go for it, half an hour max and it is done!

I decide to take 500 gr of chocolates and 12 eggs. The chocolate starts to melt, it becomes so nicely liquid. I add a tablespoon of coffee, what I always do, I do not know why, and there, in a few seconds, the chocolate becomes almost solid again. What? In the meanwhile I check my 12 egg whites that are in the kitchen robot… they stay flat flat flat! Panic! It is 20:30hr and I feel tired and it all goes wrong! 

“I go for a walk!” I say to my friends who look surprised at my stressed face. What, my honour is in stake here ;-) I was lucky, shops here stay open late, so I could buy new eggs. Half an hour later I am back, calmed, thinking, I HAVE to give it another try! 

I start melting the chocolate again, I add another 250 gr and some milk, and it seems it works, it all becomes fluid again. Because of the added quantity of chocolate, I now have 18 egg whites that are to be whipped up. I start the kitchen robot, and youppiee, the egg whites start to rise, and rise, and rise… oops, that is really a lot of egg whites. I was lucky, it just did not overflow, but it was close! 
 
Aaahh that is better! I got the chocolate from the bain marie, added the egg yolks and mixed it, and then slowly added this huge quantity of whipped egg whites. Oh I was so happy, a nice smooth chocomousse! Hop, fill a lot of little glass cups and a big one for the rest, all in the fridge, and I could go to sleep. It was 22 hours. ouf!
