Mezcal Distillery

Next stop was at a mezcal distillery. Mezcal is a generic term whereas tequila is specific to a region and type of blue agave that is used.
 
Here the agave is harvested after 7 to 8 years and only the heart is used, Roasted in a pit fire for a week. Three tons of the heart are used at once.
 
Then ground with a mule turning the heavy stone.
 
After that filled ½ hot water and ½ cold water and is allowed to ferment in barrels for 8 to 15 days.
 
Finally passes through the still.
 
See the worm, it is in mezcal up to 6 months old.
 
The 7 year old mezcal certainly tasted much smoother than the rough 6 month old one.
