Topes de Collantes, Sancti Spíritus, Cuba
Morning wake-up call was with the cockerel doing whatever cockerel do, but at 3.33 am! Was not only one but it seemed like another one on the other side of the valley was echoing in reply. Thankfully no mosquitoes overnight. But I wish that I had asked for 2 mattresses. The provided blanket served as a pillow and with the long sleeve merino top on, being inside my silk sleeping liner was enough. The constant sound of the river below provided the back drop sound throughout the night.

Up at 6.30 am (6:30) just as dawn broke for a refreshing long hot shower knowing that tonight's shower at Hacienda Codina has what the local call no "hot water service".

Breakfast at 7.30 am (7:30) and more ham and cheese omelette, sliced fruit, hard dried bread, jam and coffee. Given our 2 bottles of 500 ml water after yesterday someone had taken more than their day's 2 bottles and it was time to depart. Once our bags were packed at the back of the Russian truck, we all piled on board and away around 9 am (9:00) bound for Casa del Cafe the coffee house just 40 minutes away that we passed yesterday. Local guide Leo gave us an overview of how coffee was introduced here from Ethiopia, how it is grown, harvested, dried and finally roasted. I had the Café con Crema, espresso with milk cream which is certainly different than my normal milky coffee CUC$1.20 / US$1.20 / NZ$1.85.

Cophea Arabica, cophea execelsa, cophea Liberica and cophea canephora are the 4 types of coffee grown in Cuba.
