The SIGNATURE Restaurant' - Dining Experience

The best combinations of flavors I have ever experienced . The meal was culinary poetry.


People refer to signature restaurants in general when they stand out for their exceptional cuisine. Well in this case, the 'SIGNATURE' restaurant of the H15 Boutique building, seems that justly deserves its name.


The restaurant is located with the H15 Boutique hotel.

CHEF / AWARDS: 
Wojciech Kilian is a very charismatic and talented person but humble at the same time, a person who prefers to create backstage without being a showoff. 

The quality and originality of his cuisine is confirmed by the prestigious awards and distinctions the restaurant has received. Recently a two "spoon and fork" rating by Michelin, substantiating its strong position in Warsaw’s culinary landscape. Further to that, two more awards in the most prestigious culinary competition in Poland, -the Wine and Food Noble Night 2014.

In the capacity of a Food Critic I had the pleasure of dining out here, enjoy the choices on the set menu, and meet ‘for a while’ the Executive Chef.

Kilian has not many words, so this is the reason I used punctuation marks above because I only saw him for a while but I understood much . Between us, I consider this a merit. In reality what counts for him is to make your dinner and see that you like it.



 
ATMOSPHERE: Chic and elegant with a ‘flaming bar’ -an interior with elements that distinguish the Signature. Besides the fancy columns, renovated Oswald chairs from the 50’s, genuine Serge lighting, and original photos of Marilyn Monroe by Milton Green, -definitely difficult to associate all these with the former Soviet Embassy existing here!

Signature shares the beautiful glassed-in patio with the Boutique H15 on the trendy Poznaska Street. In the evenings the live piano music creates the unique atmosphere for a memorable dining experience.

CUISINE:  Modern International Fusion.  
An inspired cuisine not only from Kilian’s own distinctive flavor combinations but inspired also by the culinary arts of such masters as Thomas Keller and the Roca brothers .

MENU: Reasonably priced, seasonally modified menu with almost all ingredients being organic with no chemicals or use of palm oil.

SERVICE: Top notch and the team spoke very good English which is not always the case when travelling abroad. A huge thanks to Jacek the manager of Signature who was patient enough until I take my photos. Pawel, Monika and lastly Kacper the young pianist whose performance was exceptional.


 
SET MENU: 250 PLN. Polish accents and sophisticated flavours!

My very promising culinary journey starts with a welcoming glass of champagne over a friendly chat. What a great way to start!

The bread (3 choices) was stunningly fresh and nicely presented, followed by a creative, light and refreshing amuse bouche.  



 
 
APPETIZERS:

The zesty Goat Tartare over smoked freshwater prawns, sprinkled with cucumber sauce and ginger, slightly spicy had the perfect combination . Yummy!

Scallop, potato mousse with cuttlefish had the wow factor! Mild sweet and delicious, presented on hot rocks had a mellow flavor!

This latter warm starter paired well with the nice Chenin Blanc, M.A.N Family wines, Coastal Region 2015. –fruity scents of grapefruit and passion fruit, with an elegant finish.



 
SOUP: I loved the savory Gazpacho with crab. It was exquisite, rich in texture colour and flavor. Big thumbs up!

The savory intermezzo before the main, presented in a cocktail glass was the unique palate cleanser. Light and refreshing!  



 




 
 
 
MAIN COURSE: 

Two choices here, the Lamb chop and the Brill . I opted for the fish as the lightest alternative. 

The succulent fleshy piece of brill garnished with crispy quinoa, sat on white asparagus, paired with a goat cheese mousse and white radish. An exquisite choice, light and yummy is highly recommended.

The pairing wine for this dish had a pleasant taste, coming from Burgundy. The Chablis 1er Cru Fourchaume. Pleasant taste with fine thread of acidity.


 

DESSERT: The White chocolate bavarese was divine with a creative and eye-catching presentation. Go for it, you will love it!

Pairing dessert wine the Coteaux du Layon "Le Terriades".





  
 
IN ALL: Personally I am very picky and I value good food . This was an unforgettable dining experience, well-balanced, creative and strategically portioned! The culinary courses were exquisite, prepared from pure ingredients with a refined intensity of flavours for the tongue and with an immaculate presentation. Finger licking good and super yummy….I can’t wait to be back!
