An Exquisite Fine dining with a Thrilling Latin twist - Justly Deserves its Awards!

Back to Salto, one of my favourite and way too popular restaurants in Warsaw, housed in the Rialto Hotel I was staying, a very popular 5-star in the city .

The owner of the restaurant Martin Gimenez Castro was absent the night I arranged to visit for another Tasting Experience, but we met the next day at the CHEVICHE, Martin's brand new venture!





OWNER: Winner and crowned Champ of the 2013 Top Chef series, awarded by Poland 100 best restaurants, Martin is considered a very talented Chef and all these years he has proved it with his culinary creations. A great guy, friendly and extremely passionate with his work. Coming from Patagonia himself, his menu reflects his Argentinian roots and personality.



 
SERVICE: The unerringly fantastic service left us, both feeling pampered and valued. Courteous, friendly and well-trained waiting staff .

CUISINE: South American delicacies with twist. Easily could be described as a cultural blending of Mediterranean influences.  -A Michelin Star Level.

Seafood mostly and Argentinian Steak, exquisite creations presented using modern techniques and inspiring ideas.





 
DEGUSTATION MENU: With wine pairing 399PLN per person. The price of menu with no pairing wine 259 PLN per person.

The ritual of our meal starts with a glass of sparkling wine followed by the most playful and tasty amuse bouche. The bread presentation was out of this world, extremely creative and appetizing!
 

APPETIZERS: The mouthwatering Tiradito de Corvina followed, light and delicate with panca giving it the right spicy flavour balancing well with the exotic passion fruit . Big Thumbs up!

Costa Patagonica, -a Seafood surprise! (Argentinian prawns, oysters and octopus) Tempting and divine, bursting with flavour and a presentation beyond any imagination.

We loved the procession of dainty bite-sized morsels and each presentation was more surreal than the previous.
 

Calamares en tempura, another bite-sized morsel (Squid tempura in spicy fish sauce) might not have had the most attractive presentation, but it was super yummy.


 
A "refreshing" palate cleanser followed presented on a cold-freezing stone. It was not exactly a sorbet but had the sweetness more or less of an ice cream. Not that light as it should have been, I don't give it credit.



 
MAIN: The savory Liebre Patagonica reminded me of dumplings. (Hare/pine sheep) Not that fond of this kind of food myself, but in reality it was tasty all right and those who love pasta will love it.

'Chivo’ the very last dish (Goat/eggplant/mint) scrumptious and yummy, perfectly cooked with an appealing presentation. I loved it!



 
BEVERAGE: Regarding wines, the general philosophy is to offer the very best, maintaining at the same time value for money .

I was flattered in a way coming across the dessert Greek wine being served at Salto. I hope the coming year I am back, to see included on the menu list a Greek wine to accompany one of the menu choices.

Pairing wines were from Argentina, Portugal, Austria, France, and Greece.

Pinot Noir “Reserva, Las Perdices.

DESSERT: Remolacha con queso de cabra . Easily could be called  "The Beetroot Explosion!” Fruity and light, it was Yummy all right!



 
IN ALL: Unless you come here to experience all this ritual flow of the menu, you cannot totally understand it. Perhaps a very different dining experience from what you are accustomed but definitely it pays to come here even for once. If you are in Warsaw drop by and treat yourselves with the culinary delights of Martin Castro. You won’t be disappointed!
